Executive Chef Jorge Morales’s style is Montana-elevated and sustainable cuisine. His style reflects the growing movement towards a healthier and down-to-earth lifestyle that supports our local farming and ranching communities. Jorge’s food and beverage journey extends over 30 years and across the country, starting in Miami, Florida, then to Portland, Oregon, where he worked under Chef Dolan Lane at Clarklewis Restaurant. This is where Jorge was inspired and learned the art of creating sustainable cuisine, the art of farm-to-table.

For the past 15 years, Jorge has delighted Montana locals and visitors as Executive Chef for Plonk in Missoula, The Boat Club in Whitefish, and Moonlight Basin in Big Sky.

“My goal is to share with our guests a thoughtful, properly sourced, and deliciously executed dining experience,” says Jorge.
